A few recipes

I'm already kind of tired of blogging. No one reads this anyways, haha. I don't even know what to type to connect to people! 

I am a very scheduled person, very organized. I have everything entered into my phone, like my world would fall apart if I didn't religiously enter everything into it. I have work schedules, notes, post it notes, alarms, recipes, directions, addresses, anything you can think of, I have it! (I'm a big "app" person too)

As a young woman in today's world, who was raised by her dad, I grew up cooking spaghetti and chicken friend steak. Those are mainly the only two things I can remember eating. And we'd have "Breakfast" nights. 

Recipes are a great thing. Any recipe can be done, if you can read and follow directions. I guess my mother doesn't think I can do this. I'm joking people! Every woman is supposed to be a superb cook, and well, not to brag, but I am too. My mom seems to think that I can't cook, but let me tell you I whip up some amazing dishes. I'm also a very picky eater, so a lot of my cooking involves things that I like. I could care less what you like. I'm basically cooking for me, plus I have to throw your portion accountable as well.

Just this year my mom discovered that if you take some scrambled egg, and cheese, and put it between bread, it's really good! Like in her 50 some odd years, she hadn't taken the time to put egg and cheese in bread. Simple as that. And I have amazed my mom with my "cooking".

 "Hunters Chicken" - Renamed "Jessie's Chicken"

One of my favorite dishes my mom cooks is very simple. I wish I had a picture of the final product, because it is so delicious looking! She uses "Wacky Mac" Veggie Spirals for pasta. So, boil according to the packaging. I have included a picture, you can also use store brand if you like.


Second, we cook some chicken. Using a large pan, just brown each side of a chicken breast. Cut into smaller chunks (bite sized), and keep cooking!

Take regular Italian Salad Dressing, and reduce the heat to a low/med setting. I'm not very technical, as I like to taste the dressing, but squirt a few squirts of Italian Dressing into the pan with the chicken,  allowing the dressing to cook in with the chicken. Reduce heat. 

Now, just take your pasta, drain it, and place it back in the pot. Add the chicken, and a little more Italian Dressing, mix, and YUM! 

You can also chop up black olives, celery, onion, anything else you think would be good for this easy pasta dish.

Cranberry Stuffed Chicken Breast

Another easy thing I started doing with boneless chicken breast was thawing, and putting cranberries and cheese in the middle. 

We had an abundance of cranberries after a failed grocery store buy, and I could only eat so many in a salad. So, I got some provolone cheese (graded), and carefully sliced the breast sideways, and placed the cheese and cranberries in the middle, then folded back over. I held them in place with toothpicks. I then covered the breast outside with flavored bread crumbs.

I cooked them on the stove top, browning the outside, but it wasn't doing what I wanted. I placed in the oven (heated at 400), and honestly just kept an eye on them.  I flipped them about every 8-9 minutes, and they only oven cooked for about 20 minutes. 

They were perfect! Runny cheese was perfect, and I got many compliments that night :)

Mushroom Patties

If you are a fan of mushroom soup, this one is for you.

Take hamburger meat, and make into patties. Completely cook the hamburger patties. Take a can of mushroom soup, and simply put into pan with patties. Let simmer/warm. 

Cooking rice with this meal is very good as well. Serve patty on a bed of rice!

Hopefully these easy simply meals helped you. Maybe you feel lazy today, or maybe in a rush and need dinner cooked in under 20 minutes. All of the options mentioned above will work (Minus the cranberry stuffed chicken)!
